Went through that over here about 2 years ago I believe. That should take care of it for a while (one would hope).

I use the twice-fried method. First submerge the potatoes fries in a bowl of water for at least 30 minutes up to 24 hours. Remove the fries from the bowl of water and blot the water off the fries. Then deep fry them in oil 325F the first time for 5-7 minutes, scoop them out and drain. Raise the temp of the oil to 350F then fry again for about 2minutes, drain and salt. None of which is particulary healthy I expect. <grin> A lot of the method involves not crowding the guys in the pan too much. Maybe do two handfuls at a time.
