1. After having sliced the potato in 15mm slices, boil them for 10 minutes.
2. Deep freeze the chips for 60 minutes to dry-freeze them.
3. Fry them in 130C oil for five minutes.
4. Raise the temperature to 180C and fry them until golden, usually seven to eight minutes.
5. Let them settle on a paper towel until the oil is drained.
