A "Projektstrukturplan" is a German technical term from project management, so this does not have to be translated the usual way, it is a fixed term with a fixed meaning. I think "work breakdown structure" is the correct corresponding techical term for project management in English.

Yes, and that's exactly what I already wrote. However, the German term "studienbegleitend" can mean both things, there is no distinction in German. So this would have to be decided depending on the context. In my experience, this kind of "projects" are run in parallel to a course, not over the whole study. So I would go for "course-related".
