Cat5e wiring works fine for 1000Base-T and the new 2.5 and 5GBase-T. But starting with 10Gbit/s I'd go for fiber. As long as you don't get much more than 1Gbit/s via the GPON (FTTH) there's no need for in-house fiber. And when we'll need fiber the hardware will be much cheaper than today.
