But you can't have "Schengen only". When people can freely cross borders, then so can criminals. And if criminals can freely cross borders, you need a police that has the authority to cross borders to chase the criminals. And having a police that may cross borders means that you need some supranational authority to regulate and control that police. One can not have 100% open borders AND 100% national souvreignty.

Do not forget the Irish, they mae excellent wiskey. (with "ey") And if all else fails, we can always make our own whisky.
What I expect to happen is that Scottland will eventually leave the UK and go for EU membership. Northern Ireland finally joining the Republic of Irelans is another, somewhat less likely scenario.
