We have history from the moment there is a written account. That "written" can be text, cave-drawings, dinosaur footprints, dwellings, burial-items, ...
"De Bello Gallico" is covered by that definition which, btw, does not come from me. It is in every aspect a historical account describing Caesar's military campaign in Gaul. History is written by the victor and Caesar was victorious. Vercingetorix nor Ambiorix reported on the same era, hence there is the one account that we have.
Until time-travel becomes possible "De Bello Gallico" is what we have.
