I think it has to do with the kind of potatoes, we don't have the problem here. Keeping them in water here is used as a means to prevent them from turning black through exposure to the air.

I've never used a cookbook. It's more like "How about if I try 'this'?" The successes are equaled by the number of failures. :-)

Sunflower seed oil here ... these oils are better than pork fat.
