There are cases where you might want multiple /64 LAN segments. A /64 is the minimum if you're using SLAAC, which would normally be the case. If you want to isolate your networks (the example of the PCs, iOT segment and one or more for the car(s) being a good one), then you need multiple /64s.
In my case, one obvious use case is to dedicate one of my /64s to ham radio, which will require a decent firewall between it and the rest of the world, so I can carefully control traffic for regulatory reasons.
