If they use it for interchange, they are on their own. Once they want to participate in Fidonet, they should take some care of compatibility with protocols used by other members.

Same thing here: my node supports standard binkp (over both IPv4 and IPv6) as well as experimental "securely tunneled binkp".

No: even G.711 does not give you full modem support - you'd need real E0.

Most likely they use older VoIP techniques based on E1 (30*E0 + 2 service channels) tunneling. Such hardware is very expensive to support, so most companies are getting rid of it.
